French toast gets a fun and easy twist with these simple roll ups!
Sandwich bread is spread with sweetened cream cheese, and rolled up with your choice of berries. The rolls get dunked in beaten egg and then fried up till golden brown. A roll in cinnamon sugar, and a special breakfast is served!
And no one needs to know that you didn’t slave over a hot stove…..
This dish works with fresh fruit or frozen, and is delicious served with a dusting of confectioner’s sugar or a drizzle of maple syrup.
French Toast Roll Ups:
- 4 ounces cream cheese, at room temperature
- 6 tablespoons granulated sugar, divided
- 2 teaspoons cinnamon
- 6 slices white sandwich bread, crusts removed
- 1/2 cup blueberries (fresh or frozen), plus extra for sprinkling
- 2 large eggs
- 2 tablespoons butter
- Maple syrup or confectioner’s sugar, for serving
Beat the cream cheese and 2 tablespoons of the sugar till well blended. Stir the remaining 4 tablespoons of sugar and all of the cinnamon in a small shallow bowl; set aside.
Working with one piece of bread at a time, use a rolling pin to flatten – place on a cutting board or work surface and repeat with remaining slices. Divide the cream cheese mixture among the slices of bread and spread evenly. Place a row of blueberries along one edge of each slice of bread, and starting with that end, tightly roll it up.
Beat the eggs in a shallow dish or pie plate. Carefully dip each roll in the egg, turning to coat completely.
Melt the butter in a medium pan over medium heat. Working with three rolls at a time, place in the pan, seam side down. Use tongs to turn the rolls until they are golden brown on all sides. Transfer to a plate to cool slightly.
Coat the rolls thoroughly in the cinnamon sugar. Serve immediately, with additional blueberries and maple syrup or confectioner’s sugar.
