It can be challenging to maintain healthy eating habits during the holiday season – it’s tough to compete with the seemingly nonstop temptation of treats and snacks everywhere you turn!
Having a stash of good-for-you options – that taste good too! – is key, and these easy baked kale chips are just the ticket!
Kale is packed with nutrients, and when baked into “chips” are as deliciously satisfying as any crunchy snack that’s sitting in your pantry! They’re a snap to make too – just chop, toss with a bit of oil and seasonings and bake!
Easy Baked Kale Chips:
- 1 bunch dinosaur kale (also called lacinato or tuscan kale)
- 1 tablespoon olive oil
- Salt and pepper
Pre-heat the oven to 300 degrees; line a baking sheet with parchment paper.
Remove the stems from the kale and chop into large pieces. Wash and thoroughly dry.
Spread the kale on your baking sheet and drizzle with the olive oil. Use your hands to massage the oil into the leaves, being sure to coat all sides. Spread in an even layer and season with salt and pepper.
Bake for 10 minutes, then rotate the pan and continue baking for about another 10 minutes, or till the pieces look dry. Let cool on the pan for 5 minutes (this helps them crisp up even further) and serve immediately.
1. Flat leaf kale is the easiest to work with but any type of kale will work!
2. We used salt and pepper to season but the sky’s the limit! Any spice you like can be added, as well as a combination of your favorites.
3. Kale chips can be stored in an airtight container at room temperature, but will start to lose their crispness after a few days.
